Kick Those Cravings- Paleo-Style!

I would like to emphasize that being paleo does NOT mean that desserts are limited to fresh berries and a handful of nuts. That all-American craving for tastey breads is not something that you're going to have to overcome.

Word of the day is Substitute!

My boyfriend has become accustomed to my methods of meal-planning and cooking. Typical conversation heard at A.J's house:

A.J. "What are you making, babe?"
Me "I'm experimenting. I really wanted a *insert paleo-unfriendly food*, and am trying something new."

There have been some experiments gone awry that met an untimely end in the garbage. But, lately, things have been working out well.

Key ingredients:
-Almond Meal (or any other nut meal)
-Eggs

I have discovered that many "cravings" can be addressed by making some great tasting treats from the almond meal / egg base. Here are my most recent experiements. *Note, most measurements are a SWAG, you may need to alter slightly*



PAN-COOKED PALEO FOCACCIA
-1c. almond meal
-2 eggs
-1c. chopped fresh spinach
-Himalayan salt
-any fun seasoning you want (I used garlic and cayenne pepper)

Mix all ingredients in a bowl, should be pastey. Heat pan on medium heat. If you need oil, go with what flavor you want; use EVOI, Coconut oil, or organic butter. Cook like a pancake. Remove and enjoy! (You may want to put a little more oil or butter on it after)

I put a local Texas Hot Sauerkraut on mine, and it was perfect!




APPLE PIE
-1c. almond meal
-2 eggs
-1 TBS softened Organic butter (this is non-negotiable)
-1 TBS Agave nectar (or whatever sweetener of the week is the least toxic)
-pinch of Himalayan salt
-Vietnamese cinnamon, pumpkin pie spice, or any other fun flavor of choice
-1 large apple (I used an Organic Jonagold)

Pre-heat oven to 350 F. Slice apple and layer bottom of a 9"x9" glass pan. Sprinkle cinnamon on the apple. Mix all ingredients into a bowl and pour over the apple. Bake 25-35 minutes, or until well-browned. Remove from oven and spread a thin coat of organic butter on top. (Next time I make this, I'm going to try a cinnamon glaze with cinnamon, butter, and palm sugar.) If you want to do the ala mode thing, I recommend coconut-milk based ice cream.

I would also like to share that I have an INCREDIBLE titanium pan that requires no oil and cooks evenly everytime. They are not available in stores. If you are interested in purchasing one, let me know. I can hook you up.

  1. Loving the blog! My husband has been attempting the paleo diet but he is getting bored, as he isn't experimenting. I showed him your blog so hopefully he can get some inspiration and even reach out to you for some more ideas! Keep it up!

  2. Tried the eggs and almond meal. Love it! I topped it with regular, raw sauerkraut. Delish! A welcomed alternative to any meal.
