Paleo Blueberry Pancakes



The other night, I experienced some pretty massive carb cravings, mostly towards sugar and desserts. In the Healthy Girl Challenge, you lose 1 point for each serving of sweets consumed in a day. I'm on the 4th week of the challenge, and have been pretty good about not eating desserts. Instead of giving in, I made these awesome pancakes the next morning.


2 eggs
1 c. almond meal (add more as needed)
cinnamon and ginger as desired
pinch of himalayan salt
1/2 c. blueberries
1/4 c. shredded coconut
1 tsp vanilla extract
1 TBS sweetener of choice (raw honey, agave, coconut nectar, palm sugar... pick your poison)


Mix up the dry ingredients, add the wet ingredients. Pre-heat pan on medium heat. Use a 1/4 c. measuring cup to scoop batter onto pan. I use a rockin' titanium pan that requires no oil and always cooks evenly.

I spread coconut oil on each one AFTER they were done and used some almond butter and local honey for added goodness.
